I've aquired a
Caldera Tallboy smoker. I fired it up tonight to see how it runs. Loaded a picnic shoulder around 9:00pm and we'll see what we end up with in the morning. I will also cook some Johnsonville Sausages and some
chicken thighs pack it all up and head out to watch the Pats beat up on the Jets. Life is good.

What are you using for fuel? Does the Caldera have a water pan?
I'm using lump charcoal and no there is no waterpan. You do need to put a drip pan under the meat though so you don't get flare ups. The cooker ran great all night. I had to refuel at 5:00am.
could you put some water into the drip pan and get the same effect as a water pan?
From what the directions say it's not advisable and not necessary.
So, how did it turn out? Does the caldera break down and set up as easy as it seems?
The pork turned out great ! I haven't really broken down the caldera yet. When I got it, it was in two pieces. The firebox was seperated from the main chamber. It took me less then a minute to connect the two with the four speed bolts. Peoples concern that the cooker will be a greasy mess after use are unfounded. The drip pan keeps everything pretty clean other then a little splatter on the walls of the cooker which you could easily clean with a paper towel and some multipurpose cleaner. I have a pickup truck so I don't see myself breaking the cooker down to transport, but it's nice to know I can if the need arises.

So basically, you're pretty happy with the Caldera? Just asking because I'm looking for a smoker to buy and I don't have all the room in the world for transporting.

Yes I am happy with the Caldera so far. Keep in mind I've only cooked on it once. I will be using the cooker in competition next weekend which will be a true test of it's abilities. I will be using all new rubs and sauces so where I place in the competition will not be an indicator of how the cooker performed. I'll let you know my opinion of how well it did.

Are you using a Guru as well for temp control? Just curious as I got one myself a couple of days ago and was quite impressed.
